Eggplant salad is a ppreciated by many people, each country with its own version. This Turkish recipe is very easy to do and incredibly tasty.

Ingredients:
-2 baked eggplants
-yogurt
-olive oil
-garlic
-a lemon
-nuts

Mince the eggplants, add them to the robot together with garlic, a tablespoon of oil, one tablespoon of yogurt, salt, lemon juice. Mix well. Gradually add oil, to taste. Do the same with the amount of yogurt.
If you want, you can add a tablespoon of ground nuts in the composition.

Decorate with finely chopped nuts and sprinkle salad with olive oil or, if you have,with peanut oil.

Serve chilled.
the spicy version includes some spicy baked chili peppers.
