Spinach is very healthy and is a source of minerals, vitamins and amino acids. It’s recommended that spinach is served raw or a little cooked in order to keep as many of its properties. Spinach hepls the immune system. Spinach has nutritious, invigorating and detoxifying properties.
Spinach with mushrooms recipe is very simple and can be an inspired choice for fast days.
Ingredients:
-one kg of fresh spinach
-one small onion
-2 cloves of garlic (or as many as you want)
-500 grams of fresh mushrooms
-100 grams of tomato juice
-a little olive oil
First wash the spinach in several waters. Then put it in a pot with only the water remaining on the leaves.
Let it cook for few minutes on high heat.
Cook chopped onion and garlic in a little olive oil.
Clean, wash and chop mushrooms.
When the onion is cooked until it becomes glassy add the mushrooms.
After the mushrooms cooked too, add the little cookd spinach.
Add the tomato juice and stir. Sprinke salt and pepper.
Let simmer for 2 to 3 minutes, then turn off heat. It is very important not to cook spinach too long.
Serve immediately.
