  Salmon with cherry tomato and Provencal herbs

One of the most delicious and healthy cuisine is the Provençal one. We will cook these fresh salmon fillets in Provencal style, following a classic recipe, extremely aromatic, full of flavor and has that typical French "je ne sais quoi".
 
Salmon with cherry tomatoes is a recipe that will bring French taste on the plate, and the "joi de vivre" ("joy of living") specific of the southern countries, in which the French people excel.
 
You will see how to prepare salmon Provencal quick and easy, how to keep the tomatoes' appearance and flavor, how to make an incredibly flavorful sauce with just a few ingredients, you will see that the only thing you need to cook French is ....passion.

Ingredients:
-salmon fillets (the no of people invited at the table)
-mix of dry Provencal herbs
-half a large lemon
-2 cloves of garlic
-coarse salt
-olive-oil
-black-pepper
-cherry tomatoes


Grease a bowl with olive oil, place the salmon. Sprinkle salt, pepper. Squeeze the lemon over salmon. Grind the garlic and generously brush the salmon to form a fine crust of crushed garlic. You can leave a little more garlic here and there, for visual detail.


Generously sprinkle Provencal herbs. Cut cherry tomatoes in half and place them with the pulp over salmon. This is how they will remain juicy and will not dry out. Plus they will have an incredible aroma of garlic and Provencal herbs.


Cover the pan with aluminum foil and bake at 180 degrees for 30 minutes.


Remove the foil and let it bake in the turned off oven for a little while.


Serve warm, to feel the flavors better. Accompany the preparation with a cool, floral-fruity rose wine.
