  New potatoes dish with chicken and green olives

This summer dish is as cheerful and colorful as it is tasty. A simple recipe that will bring summer flavour on your table.
It is ideal with new potatoes, but can be cooked with any other type of potato. New potatoes add particular flavour and that's why we recommend them. Obviously you can cook this recipe 100% vegetarian, no chicken, and then you will discover a very simple and delicious fast recipe.
The combination of potatoes with green olives, green peppers, tomatoes and mashed parsley is the key to the whole taste.

Ingredients:
-8 potatoes
-a chicken breast
-a medium white onion
-a red pepper
-green olives stuffed with peppers (about 20 olives)
-mashed tomatoes (4 tablespoons)
-sunflower oil or olive oil
-pepper
-sweet paprika
-a bunch of parsley


Cook chopped onion in a little oil, until it becomes glassy. Do not let it become brown.


Add chicken breasts cut into cubes or strips, after preferences.


Cook chicken breast until almost done. Add potatoes cut into cubes. Sprinkle lot of pepper and sweet paprika. Add a half a cup of water. Warning: do not add salt because the olives are already salty (if at the end, after the olives are cooked too, and you think you need more salt, add then).


Put the lid and let simmer for 5-7 minutes. Then add the mashed tomatoes.


Stir and leave on heat for another 5 minutes, with the lid on. Add chopped red peppers and sliced olives and let boil for another 2-3 minutes.


Finally, check if potatoes are well done (test potatoes with a fork). Turn off heat, add chopped parsley and stir.



Serve immediately.
