  Kafta - Lebanese skewers

Kafta (or "kofta") is the name of Arabian skewers made of minced meat (lamb or beef), specific spices and finely chopped herbs. Put on grill, the kafta skewers spread a pleasant and alluring smell and taste delicious.

Serve with salad, yogurt-based sauces and pita.

Ingredients:
-800 gr minced lamb (or beef or mixed)
-fresh herbs (mint, parsley)
-Arabian spice mix for meat: paprika, cumin, coriander, nutmeg, cinnamon, black pepper
-salt
-1 small onion finely chopped (I put some green onions)
- garlic (optional)


Mix all the above ingredients. It's recommended to put more than 2 tablespoons of spices (to gain stronger flavor).


Let the meat stay for 30 minutes with spices, then form the skewers.


Fry them on medium heat, rolling often.


When well browned, put on a platter.


Serve hot, with cold yoghurt with garlic and chopped mint sauce, raw cabbage salad or other vegetables.


They are ideal for parties.
