  Grilled caribbean rabbit

An eccentric delight, the grilled Caribbean rabbit brings and touch of elegance to each festive meal. The rabbit meat is very dietetic, therefore you don't have to worry about your figure if you taste this recipe. If you want to live an exotic moment, choose this grilled Caribbean rabbit recipe.

The Caribbean Islands attract lovers from around the world, the most famous destinations are: Aruba, Bahamas, Barbados, Cayman Islands, Santa Lucia, Jamaica, Puerto Rico. The luxuriant nature, the harmony and exoticism define your stay in the Caribbean Islands. The Caribbean menus are delicious, light, some even.. aphrodisiac.

An exotic menu, from the Caribbean Islands is, without a doubt, aromatic, spicy, sensual... a dream.

It's ideal for a romantic dinner or a festive menu.




Ingredients:
- one rabbit cut in small pieces
- Caribbean spices
- one lime and one lemon
- olive oil
- salt
- fresh mushrooms or canned mushrooms
- 2-3 cloves of garlic


Prepare the rabbit marinade: mix two spoons of olive oil with the lime and lemon juice, salt, minced garlic and Caribbean spices (mix of: black pepper, Cayenne pepper, green pepper, chilli, paprika, coriander, curcuma, savory, minced laurel leaves, caraway, rasped lime peel).


Wash the rabbit pieces and add them in the marinade. Lave the meat in the fridge for several hours, mixing it every now and then.


Heat-up the grill and put the rabbit piece on the grill. Grill on a medium fire, so that the meat is well done. After 5 minutes, turn the meat over.



Leave for 5 minutes and turn again on the first side for another 3 minutes or until when the meat is well done on both sides.


Rinse the mushrooms in the marinade left from the meat, until the sauce is completely reduced.


Serve the grilled Caribbean rabbit on a bed of mushrooms.
