  Frittata with goat cheese and raw spinach

When you want a lunch that will provide you energy for the rest of the day but light at the same time don’t forget the delicious frittata. The italian omelet rich in ingredients is a great solution for a quick, nourishing and "light" meal.
My proposal is to give up the usual sausages (full of chemicals, sugar and preservatives) and "abuse" natural products such as cheese and vegetables. Now, when spinach is fresh, is the ideal time to consume it raw as often as you can (do not be afraid, it is delicious). Goat cheese is indicated in any diet, especially when you want to lose weight because it digest easier than others. It has a much lower fat content which means it’s hypocaloric. Is a natural source of calcium, phosphorus and vitamin B12. Can be consumed at any age.
Omelet can be prepared in just a few minutes, so it's ideal when you don’t have time for something more complicated. The combination of raw spinach frittata with a glass of tomato juice with a little fresh pepper (attention to packaging, to be natural) is more than welcome for restoring your powers after a working day.
Ingredients:
-3 eggs
-100 grams of goat cheese
-a handful of fresj raw spinach
Beat eggs, mix it with crushed cheese. Preheat a teflon pan, grease it with a little olive oil and pour composition.


Cover with a lid and let the frittata cook at medium heat.
Wash spinach and drain well.
When frittata is almost done add spinach.


Fold frittata and leave it like this for another 1 or 2 minutes.


Serve hot but it is very good if you serve it cold too (you can prepare it in the morning and take it at work with you for lunch).


Alongside with a cold tomato juice (I recommend you to add a little pepper to the tomato juice and if you want you can add a little orange zest for an unique taste) is a complete and healthy meal.


This recipe fits perfectly into the concept of "slow food". Even if you can be prepared quickly, it’s important to give your body time to digest and relax. The concept of "slow food" was born in Italy as a movement against "fast food". It’s based on the use of organic plants, seeds, organic free range meat.
