  Fatush recipe

Fatush is a typical Levantine cuisine salad, colorful, fragrant, healthy and very appetizing. It is served with roasted pita pieces and is made up of various herbs and seasonal vegetables, cut big enough. Fatush salad is flavored with a very refreshing dressing based on extra virgin olive oil and lemon and the Arabian spice gives extra flavor and a touch of sour oriental aroma.

Ingredients:
-Roman salad
-fresh young spinach leaves (optional)
- 6 tomatoes
-1 big cucumber
-2 pita
-mint
-parsley
-fresh thyme (optional)
-green-onion
-salt
-sumac
-black pepper (optional)
-olive-oil
 
You can add: radishes, peppers and other vegetables (optional)


First we put the pita on a tray and sprinkle them with olive oil.


We bake them at 200 degrees until golden brown.


Wash all vegetables and herbs and drain them well.
 
Break the Roman lettuce leaves and mix them with the spinach.


Chop a lot of mint and parsley.


Prepare a marinade out of 4 tablespoons of olive oil, lemon juice, 2 tablespoons of vinegar, half a teaspoon of pepper, a teaspoon sumac, and salt.


Slice the tomatoes, the cucumber, slice the green onions and mix them with the lettuce leaves.


Mix well. Sprinkle a teaspoon of sumac. Add a little fresh thyme.


Mix again.


This is how the marinade looks like. Pour half of the amount over the salad.


Break the crispy pita into pieces and put over the salad.


Mix again.


Sprinkle with the remaining sauce. Place the salad on a plate and decorate with sliced radishes. Powder again with sumac, for added color.


It is very healthy and flavorful. It’s ideal for lent or for vegetarians.
