  Fajitas

One of the most famous Mexican recipes is "fajitas". Worth cooking "Fajitas" at home because is a very tasty and incredibly easy recipe.
Fajitas is the name of tortilla rolls filled with meat strips, fried onion and pepper. You can add lettuce, guacamole and salsa sauce (hot sauce, in case you want something "hot").

Ingredients:
-one chicken breast
-one red onion (also white)
-colored pepper
-one lemon
-one small tomatoe (optional)
-one avocado
-lettuce (optional)
-salt
-pepper
-paprika
-mix '' All spices”: cinnamon, cumin, coriander, nutmeg, clove, aniseed (optional)
dried hot peppers
-tortillas
-thyme (optional)


Wash and cut the chicken breast into thin strips. Place meat in a bowl, squeeze juice of half a lime over it. Sprinkle salt and other spices.


Stir well and let the bowl in the refrigerator for an hour. The meat will get a special scent.
Meanwhile, cut vegetables into strips.


Prepare a fresh guacamole. Obviously you can buy it, but no guacamole bought from the store does not compare to the one made at home.
I will now make a rustic, simple and truly mexican guacamole.
Wash the avocado and cut it in half.


Take out core with a knife. Hit the middle and then turn the knife and remove the pit.


Take out core from each half with a spoon.



Cut the core into cubes and put it in a bowl. Immediately sprinkle it with juice from the other half of the lime. Add salt (preferably freshly ground).
Start crushing the core with a fork. The core is transformed into a rustic puree (if you want a soft cream use the robot).


Finely chop the onion (about one quarter for one avocado). Add chopped onion and some chopped tomato pulp. Mix with a little olive oil. Taste and add salt and lemon.



Leave guacamole in the refrigerator until serving.
Meanwhile the meat is marinated so we can start preparing Fajitas.
Remove meat from refrigerator and preheat 2 tablespoons olive oil.


Add meat with the marinade in the pan and cook until sauce is reduced and becomes brown.


Stir constantly so it doesn’t burn.


Remove meat and put it in a bowl and cover it with a lid (to keep the chicken tender).


Cook the onion.


Remove onion from pan when slightly glassy but still firm.


Add the peppers and cook it too.


Now you have all ingredients. Place a tortilla on a plate and spread guacamole.


Put some chicken strips, a few pepper strips, onion and lettuce.
Roll, wrap one end tight with aluminum foil (offer more safety while serving).
