  Dietetic pound cake with lemon, walnuts, almond and cocoa

If you want a simple to bake desert which is delicious, then you should try this recipe of diet pound cake with lemon. If you use soy flour instead of the classical white one, then you'll discover a very dietetic, flavored and fluffy cake

No matter what flour you use, what makes this cake fantastic is the aroma: a mix of lemon, walnuts, almonds and cocoa will surely delight your senses.

It's perfect next to a cup of coffee or a hot chocolate.

Ingredients:
- 200gr flour (either soy or any other type of flour)
- 6 eggs
- 200gr sugar or fructose (fructose is more dietetic)
- 70gr minced walnuts
- 2 spoons of cocoa
- one lemon
- one orange (just use the rasped peel)
- half a sachet of baking soda
- 6-7 spoons of sunflower oil


Separate the white of the egg from the yolk of the egg. Scramble the whites of the egg with baking soda until they become foamy.


Mix the yolks of the eggs with sugar/fructose, then add the essences (vanilla, rum), lemon juice, the rasped lemon and orange peels.


Mix until it all become homogeneous and creamy. Add gradually the oil by continuously mixing.


Add the minced walnuts and the mix again.


Mix the baking soda with 2 spoons of lemon juice.


Sprinkle the flour in the yolks of egg composition, continuously mixing, then add the baking soda.


Now give up the mixer. Add gradually the foamy whites of the eggs in the yolks composition by lightly mixing up and down, with care so that the whites foam does not get ruined.


When you're done with the whites of the eggs, the composition will have grown significantly in volume and it should be very fluffy.


Pour 3/4 of the composition in the dietetic pound cake, and the mix the rest with cocoa.



Pour the cocoa composition in the middle of the pound cake tray.


Now use a fork to mix the two compositions.


Sprinkle the almond flakes over and put the try in the oven (already heated at 180 degrees).


It's cooked at 180 degrees, about 30 minutes, until it's rosy and it becomes elastic when you press it.


Leave it to cool down to the room temperature, then take it out of the tray and cut it into slices.


It's fluffy and not at all dry (due to the lemon juice), with a delicious aroma.

P.S: if you don't have silicone trays then anoint the metal trays and spread flour on them before pouring the composition.
