  Chicken with green beans

Chicken with green beans is a traditional Romanian recipe, very simple and tasty. This recipe adds flavor by adding the eggplant, roasted peppers and baked courgettes. The recipe can be made for fast days, without meat can be very delicious also.
Ingredients:
-2 skinless chicken breast
-500 grams broad beans
-a cup of thick tomato juice
-an onion
-3 garlic cloves
-olive oil
-salt, pepper, dried thyme
- eggplant, zucchini and roasted peppers (optional)
-parsley


Chop onion and cook in oil for a few minutes. Add green beans and a cup of water and let boil on high heat.


Meanwhile cook the chicken cut into cubes.


If you have baked eggplant, roasted peppers and baked courgettes, you can mash them into puree and add them to food. It will add consistency and taste to this preparation.


When the water is low add tomato juice over beans.


Then add the puree made of eggplant, peppers and courgettes.


Continue to boil stirring constantly. When chicken is well done add it over the beans (add the sauce from the pan also).


Sprinkle salt, pepper and thyme as you prefer. Continue to cook on low heat until sauce thickens well (about another 5 minutes).


In the end add the chopped parsley and turn of heat.


Serve warm.
