The chicken sour soup "a la grec" is very tasty and nourishing. The original taste given by the lemon flavor give an extra personality touch to a simple chicken sour soup with vegetables. The egg sauce with lemon gives smoothness and an extra touch of consistency to a Greek chicken sour soup.

Ingredients:
- 4 chicken thighs
- 1 pack of chicken hearts
- one cup of rice
- 1-2 carrots
- one celery
- one parsley
- 3 medium onions
- 2 colored peppers
- 2 eggs
- one big lemon
- liquid sour cream (optional)
- one laurel leave
Put the water to boil with the laurel leave (it will give it an incredible Mediterranean taste to this Greek chicken sour soup), add the chicken thighs well washed, take out the foam and then add the onions, well cleaned.
Always boil under heavy fire, take out the foam if it continues to appear from the vegetables. Cut the carrot and the celery root and add them in the soup.
Cut the celery stalk and add it in.
After couple of minutes, add the chicken hearts.
Cut the pepper and add it on top of the other vegetables. If you wish to add rice, this is the moment to do it (after you've washed it several times and you slooped it). The rice boiling time is 10 minutes.. which is about how long it takes until the sour soup is ready.
When you see that the meat is well boiled (you can tell by the way it detaches from the bones), reduce the fire, take out the chicken and the onion from the sour soup. You can throw away the onion.
Add the celery leaves in the boiling soup after you've cut them into small bits.
Take the meat off the bones and cut it into small pieces.
Add the meat in the soup.
Whisk the eggs and add the lemon juice.
Stop the fire or set it to minimum and add a ladle of soup in the egg-lemon composition, gradually mixing, until it also becomes hot.
Then, pour the composition in the sour cream pot, mix until it's homogeneous. Taste and if needed add more salt, pepper or lemon. If you want a richer taste, add 100ml of liquid sour cream and boil for another 2-3 minutes.
Cut the parsley and add it in the sour soup when it's already done and the fire is out.
It's served hot, with hot pepper. The Greek serve it with freshly baked bread.
