  Chicken pockets with apricot chutney and raisins

For tonight I have prepared a super exotic recipe: chicken with apricot chutney. Its perfume is stunning, the taste very aromatic and the chicken breast comes out tender and fragrant. The recipe is ideal for a romantic dinner ;), so it is better to prepare for a loved one...

The combination of hot fruits with mysterious Oriental spices (curry, cinnamon), accented by the taste of hot peppers, perfectly complements the tender chicken meat. I guarantee that each piece will melt in your mouth...

Serve with fragrant basmati rice (Thai rice) or couscous, by candlelight and have near a glass of wine (I would recommend rosé or white, medium dry, fruity).

As like any romantic recipe, we will not cook for a long time (we need time to prepare the atmosphere so we will stay in the kitchen maximum 10-15 minutes).

Cut the chicken breast into 2, lengthwise, without sectioning all the way.


The chutney sauce is prepared in advance, so we just fill the chicken pockets.


"Saw" the chicken pockets with toothpicks, brush the surface with chutney and fry them over medium heat in olive oil, chili flavored (fry for a few seconds some chili in the oil before preparing the food).


Cover with a lid. After 5-7 minutes (depending on thickness of chicken breast), roll the meat over. Add a small cup of water. Let it boil covered in sauce for 5 minutes.


Then remove the cover and cook until the sauce decreases.


It will spread a charming smell throughout the kitchen!
