  Cauliflower salad with cheese cream and olives

Fall is here and we can find cauliflower all over, so it's time to cook a delicious recipe. Cauliflower is a very healthy vegetable, from the cruciferous vegetables family, so I recommend you do not boil it very much so to keep the properties.

The recipe is simple, fast and effective. Wash and loosen the cauliflower in bunches, and boil it in salted water for 10 minutes. Then drain and mix it while still hot with cheese cream (with pepper, with herbs or simple), a little cream, salt (to taste), crushed garlic (optional). Sprinkle some olives and it's ready.


Along with a few raw vegetables (tomatoes, rich in lycopene; cucumbers or what you like), it is an inspired choice for an autumn casual lunch. It’s warm, fragrant, creamy, but not with many calories. Because we simply want to look good for New Year's Eve, right?
