  Broccoli and cauliflower soup with smoked meat and turkey breast

This autumn soup is very tasty and aromatic. The richness of the vegetables and smoked flavor give it a special note. Hot, spicy, slightly sour (because of the tomatoes), the broccoli and cauliflower soup is ideal for a casual lunch of autumn, when you feel the need of something warm and nourishing.
 
To take a full advantage out of the vitamins and minerals from this rich soup, we will not boil the vegetables for a long time.

First we wash and slice into small pieces the turkey breast. We boil it in water with salt.


We foam it well and then add chopped onions (2 large onions) and sliced celery (3 stalks of celery). Let it boil for about 5 minutes.


Then add the washed cauliflower that was previously loosened up in bouquets.


Add broccoli over the cauliflower.


Let it boil for 5 minutes. Then add 2 diced peppers.


Let it boil for 1-2 minutes more, then add 3 slices of smoked pork, cut into cubes (do not put much, just enough to give flavor).


Stir and let simmer for another 2 minutes. If you want it spicy add a little chopped chili.


Flavor the soup with thyme leaves and a bay leaf (optional). Sprinkle black pepper to taste. If you want it spicier you can add 1-2 cloves of ground garlic.


Add half a box of mashed tomatoes.


Mix well and let simmer for another 3 minutes and it's done.


Add chopped parsley.
