  Broccoli, zucchini and spinach soup

Vegetable soups are very healthy, ideal for a balanced diet. Today we will make a dietetic soup full of depurative vegetables to help you detoxify your body after the winter holidays and rich menus in these last months.
 
This recipe will propose a green soup, full of vitamins, because the ingredients are not cooked too much, just brewed, to preserve some of their nutritional value.

Ingredients:
-2-3 small broccoli
-2 succhini
-600 grams spinach or beet leaves
-1 green pepper
-1 leek
-2 stalks of celery
-1 parsley
-salt
-pepper
-pepper (optional)
-1 clove of garlic


Wash and chop the leeks. Put it to boil.


Add the chopped celery.


Let it boil for a few minutes, until slightly softened. Then add the broccoli bouquets.


When broccoli changes its intense green color, reduce heat and add salt.


If you use beet leaves, separe the white fibrous part from the green ones. First add the white parts in the soup.


Add the leaves only after 2-3 minutes. If you use spinach, add it to the soup when the broccoli has boiled for 5 minutes.


Add a clove of garlic. Sprinkle a little bit of pepper.
 
If you want to burn more calories and the health allows you to eat spicy, then you can add a little hot pepper in the soup.


If you have a very spicy hot pepper, like the one in the picture, pay attention to the amount added to the soup. Only a piece is enough to make the soup extra hot.


After the leaves have boiled for 1-2 minutes, turn off the heat and mix the soup.


Add parsley and mix again.


Serve warm. It is very good and nutritious, even if it's just a soup.
